Young Chef for Hire! Easy Pie Recipe. . .
Our second youngest granddaughter came to visit this morning. After practicing her viola for a while she asked about lunch. At 12 years old, Lauren is a spindly framed pre-teen who can outrun any kid her age on the basketball court, plus shoot 3 pointers and make many free throws! It must be that she’s going through a growth spurt as she is already taller than I am! She prepared most of our lunch today clockwise from the top left: cole slaw, stuffed portabella mushrooms, cheese cornbread, and broccoli mushroom quiche. I prepared the slaw which she didn’t quite fancy, but she had doubles of everything else which she herself prepared. Here is a really easy pie crust recipe:
PIE CRUST (NO PIN, NO BOWL, NO MESS)
1 1/2 cups all-purpose flour
1 1/2 teaspooons sugar
1 teaspoon salt
1/2 cup cooking oil
2 tablespoons cold milk
Sift flour, sugar, and salt right into an ungreased pie pan. Combine cooking oil and cold milk in measuring cup. Whip with fork until cloudy. Pour over flour mixture and mix with fork until flour is blended. With hands, press into shape, partially covering rim. Pinch dough into fluting for edging. Prick and bake at 400 degrees F. for 12- 15 minutes.
It was a delicious lunch! One thing she didn’t offer to do was clean up the kitchen! That she saved for Nana to do!!!
